- 1/4 cup (30 g) grated vegetarian cheese, optional

Instructions
- Decide how you’d like to prepare the zucchini: slice into rounds, cut into half moons, or chop into bite-sized pieces.
- Heat the vegetable oil in a large pan over medium-high heat. Introduce the zucchini and minced garlic, stirring intermittently, until the zucchini is golden in parts and soft, about 3 to 5 minutes.
- Remove from heat, then mix in the sliced scallions and grated cheese (if using), and add a splash of lemon juice.
