  • 1 tablespoon (15 ml) vegetable oil
  • 1 tablespoon (15 ml) minced garlic, 3 cloves
  • 1 scallion, thinly sliced, optional
  • 1 teaspoon (5 ml) fresh lemon juice, or more to taste, optional
  • 1/4 cup (30 g) grated vegetarian cheese, optional
  • Salt and fresh ground black pepper


Instructions

  1. Decide how you’d like to prepare the zucchini: slice into rounds, cut into half moons, or chop into bite-sized pieces.
  2. Heat the vegetable oil in a large pan over medium-high heat. Introduce the zucchini and minced garlic, stirring intermittently, until the zucchini is golden in parts and soft, about 3 to 5 minutes.
