Ingredients
- 1 tablespoon olive oil (15 ml)
- 2 medium zucchinis, sliced (400 g)
- 8 oz mushrooms, sliced (225 g)
- 1 medium onion, sliced (150 g)
- Salt, to taste
- Black pepper, to taste
- 1 teaspoon (5 ml) minced garlic (2 cloves)
- 1 tablespoon soy sauce (15 ml)
- 1 teaspoon dried thyme (1 g)
Instructions
- Heat the olive oil in a large skillet over medium heat.
- Add the sliced onions to the skillet and sauté for 3-4 minutes until they start to soften.
- Add the minced garlic to the onions and cook for an additional 1 minute.
- Add the sliced zucchinis to the skillet and stir to combine with the onions and garlic.
- Cook the zucchinis for 5 minutes, stirring occasionally until they begin to soften.
- Add the sliced mushrooms to the skillet and mix well with the other vegetables.
- Season the mixture with salt and black pepper to taste.
- Pour in the soy sauce and sprinkle the dried thyme over the vegetables.
- Sauté everything together for another 5-7 minutes until the mushrooms are tender and the vegetables are well cooked.
- Adjust seasoning if necessary and serve hot.
