Ingredients

  • 1 tablespoon olive oil (15 ml)
  • 2 medium zucchinis, sliced (400 g)
  • 8 oz mushrooms, sliced (225 g)
  • 1 medium onion, sliced (150 g)
  • Salt, to taste
  • Black pepper, to taste
  • 1 teaspoon (5 ml) minced garlic (2 cloves)
  • 1 tablespoon soy sauce (15 ml)
  • 1 teaspoon dried thyme (1 g)


Instructions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the sliced onions to the skillet and sauté for 3-4 minutes until they start to soften.
  3. Add the minced garlic to the onions and cook for an additional 1 minute.
  4. Add the sliced zucchinis to the skillet and stir to combine with the onions and garlic.
  5. Cook the zucchinis for 5 minutes, stirring occasionally until they begin to soften.
  6. Add the sliced mushrooms to the skillet and mix well with the other vegetables.
  7. Season the mixture with salt and black pepper to taste.
  8. Pour in the soy sauce and sprinkle the dried thyme over the vegetables.
  9. Sauté everything together for another 5-7 minutes until the mushrooms are tender and the vegetables are well cooked.
  10. Adjust seasoning if necessary and serve hot.
