Description

Delicious protein-packed balls inspired by the flavors of Samoa cookies, perfect for a nutritious snack or treat.


Ingredients

  • 1 cup rolled oats
  • 1/2 cup protein powder
  • 1/2 cup almond butter (or peanut butter)
  • 1/4 cup honey (or maple syrup)
  • 1/4 cup shredded coconut
  • 1/4 cup chocolate chips
  • 1 tsp vanilla extract
  • 1/4 tsp salt


Instructions

  1. In a large mixing bowl, combine the rolled oats and protein powder.
  2. Add the almond butter, honey, shredded coconut, chocolate chips, vanilla extract, and salt.
  3. Stir the mixture until all ingredients are well combined.
  4. Use your hands to form small balls, about 1 inch in diameter.
  5. Place the balls on a baking sheet lined with parchment paper.
  6. Refrigerate for at least 30 minutes to firm up.

Notes

For easier rolling, lightly dampen your hands. Store in an airtight container in the refrigerator for up to a week.
