Ingredients
- 454 g potato gnocchi (1 lb)
- 56 g unsalted butter (4 tbsp)
- 8 fresh sage leaves
- 2 cups (60 g) chopped kale
- 25 g grated vegetarian Parmesan cheese (1/4 cup)
- 1/4 teaspoon (1 ml) salt
- 1/4 teaspoon (1 ml) black pepper
- 15 ml olive oil (1 tbsp)
Instructions
- Bring a large pot of salted water to a boil.
- Add the potato gnocchi to the boiling water.
- Cook the gnocchi until they float to the surface, about 2-3 minutes.
- Drain the gnocchi and set aside.
- In a large skillet, melt the butter over medium heat.
- Add the sage leaves to the melted butter.
- Cook the sage leaves until the butter turns brown and nutty, about 3-4 minutes.
- Remove the sage leaves and set them aside on a paper towel.
- Add the olive oil to the skillet with the brown butter.
- Add the chopped kale to the skillet.
- Sauté the kale until it is wilted, about 2-3 minutes.
- Add the drained gnocchi to the skillet with the kale.
- Toss the gnocchi and kale in the brown butter sauce.
- Season with salt and black pepper.
- Cook for an additional 2 minutes to heat through.
- Remove from heat and sprinkle with grated Parmesan cheese.
- Garnish with the reserved crispy sage leaves.
- Serve immediately.
