- 1 medium apple, peeled and grated
- 1 egg, beaten
- 3 cloves garlic, minced
- 3 tbsp (45 ml). almond flour
- 1 tbsp (15 ml). (about 5 leaves) fresh sage
- 1 tsp (5 ml). white ground pepper
- 1 tsp (5 ml). onion powder
- 1/2 tsp (3 ml). fine sea salt
- pinch allspice
- 1 tbsp (15 ml). avocado oil
Instructions
- Set your oven to 375º and cover a rimmed baking tray with parchment.
- Combine all the ingredients in a large bowl and stir until everything is thoroughly mixed. Shape the mixture into 12 round balls.
- Warm a large pan over medium-high heat. When heated, pour in the oil. Arrange the meatballs in the pan, ensuring there’s enough space between each, and cook them until they are browned on all sides, approximately 2 minutes for each side. Depending on the size of your pan, you might need to do this in several rounds.
- Move the browned meatballs to the lined baking tray and place them in the oven. Cook until they are completely done and reach an internal temperature of 165º, which should take about 10-15 minutes.
- Enjoy the hot meatballs alongside butternut squash noodles or your choice of pasta.
Notes
- Enhance the flavor by incorporating a dash of nutmeg or cinnamon into the meatball mixture.
- Add moistness to the meatballs by including a tablespoon of unsweetened applesauce in the mixture.
- Achieve a crispy exterior by broiling the meatballs briefly post-baking for a golden brown finish.
