- 1 pound (454 g) zucchini, about 3 medium, cut into 1-inch half-moons

- 1 teaspoon (5 ml) Italian Seasoning
- 1/2 teaspoon (2.5 ml) sea salt
- 1/4 teaspoon (1.25 ml) garlic powder
- Freshly ground black pepper
- Lemon wedges, for squeezing
- Crumbled feta cheese, grated Vegan Parmesan, or Vegan Parmesan, optional, for serving
- Fresh herbs, optional, for serving
Instructions
- Set your oven to 425°F and prepare a baking tray by covering it with parchment paper.
- In a big bowl, mix the zucchini slices with vegetable oil, Italian seasoning, sea salt, garlic powder, and a few twists of black pepper.
- Arrange the zucchini in a single layer on the lined baking tray and bake for 15 to 20 minutes, or until they are browned at the edges.
