  • 1 teaspoon (5 ml) Italian Seasoning
  • 1/2 teaspoon (2.5 ml) sea salt
  • 1/4 teaspoon (1.25 ml) garlic powder
  • Freshly ground black pepper
  • Lemon wedges, for squeezing
  • Crumbled feta cheese, grated Vegan Parmesan, or Vegan Parmesan, optional, for serving
  • Fresh herbs, optional, for serving


Instructions

  1. Set your oven to 425°F and prepare a baking tray by covering it with parchment paper.
  2. In a big bowl, mix the zucchini slices with vegetable oil, Italian seasoning, sea salt, garlic powder, and a few twists of black pepper.
