Description

A vibrant and healthy roasted veggie and chicken sausage dish, perfect for easy cooking and delicious family dinners.


Ingredients

  • 2 cups of assorted vegetables (bell peppers, zucchini, carrots, broccoli)
  • 1 lb chicken sausage (sliced)
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Fresh herbs (thyme or rosemary) for garnish


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Combine the chopped vegetables and sliced chicken sausage in a large bowl.
  3. Drizzle with olive oil, then sprinkle garlic powder, paprika, salt, and pepper on top.
  4. Toss everything until it is well coated.
  5. Spread the mixture onto a sheet pan in a single layer.
  6. Roast in the preheated oven for 25-30 minutes, stirring halfway through.
  7. Remove from the oven once the vegetables are tender and the sausage is cooked through.
