Ingredients
- 2 cups of assorted vegetables (bell peppers, zucchini, carrots, broccoli)
- 1 lb chicken sausage (sliced)
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- Salt and pepper to taste
- Fresh herbs (thyme or rosemary) for garnish
Instructions
- Preheat the oven to 400°F (200°C).
- Combine the chopped vegetables and sliced chicken sausage in a large bowl.
- Drizzle with olive oil, then sprinkle garlic powder, paprika, salt, and pepper on top.
- Toss everything until it is well coated.
- Spread the mixture onto a sheet pan in a single layer.
- Roast in the preheated oven for 25-30 minutes, stirring halfway through.
