Ingredients

  • 1 cup pumpkin puree (240 ml)
  • 1 can white beans, drained and rinsed (15 oz / 425 g)
  • 1/4 cup tahini (60 ml)
  • 1/4 cup olive oil (60 ml)
  • 2 tablespoons lemon juice (30 ml)
  • 2 garlic cloves, minced
  • 1 teaspoon ground cumin (5 g)
  • 1/2 teaspoon smoked paprika (2.5 g)
  • Salt to taste
  • Pepper to taste
  • 1/4 cup water, as needed (60 ml)
  • Pumpkin seeds for garnish (optional)


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Spread the pumpkin puree onto a baking sheet.
  3. Roast the pumpkin puree in the oven for 20 minutes to enhance flavor.
  4. Remove the pumpkin puree from the oven and let it cool slightly.
  5. In a food processor, combine the roasted pumpkin puree and white beans.
  6. Add the tahini and olive oil to the mixture.
  7. Pour in the lemon juice and add the minced garlic.
  8. Sprinkle in the ground cumin and smoked paprika.
  9. Season with salt and pepper to taste.
  10. Process the mixture until smooth, scraping down the sides as needed.
  11. Gradually add water and blend until desired consistency is reached.
  12. Taste and adjust seasoning if necessary.
  13. Transfer the hummus to a serving bowl.
  14. Garnish with pumpkin seeds if desired.
  15. Serve immediately or refrigerate until ready to use.
