Ingredients
- 1 cup pumpkin puree (240 ml)
- 1 can white beans, drained and rinsed (15 oz / 425 g)
- 1/4 cup tahini (60 ml)
- 1/4 cup olive oil (60 ml)
- 2 tablespoons lemon juice (30 ml)
- 2 garlic cloves, minced
- 1 teaspoon ground cumin (5 g)
- 1/2 teaspoon smoked paprika (2.5 g)
- Salt to taste
- Pepper to taste
- 1/4 cup water, as needed (60 ml)
- Pumpkin seeds for garnish (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- Spread the pumpkin puree onto a baking sheet.
- Roast the pumpkin puree in the oven for 20 minutes to enhance flavor.
- Remove the pumpkin puree from the oven and let it cool slightly.
- In a food processor, combine the roasted pumpkin puree and white beans.
- Add the tahini and olive oil to the mixture.
- Pour in the lemon juice and add the minced garlic.
- Sprinkle in the ground cumin and smoked paprika.
- Season with salt and pepper to taste.
- Process the mixture until smooth, scraping down the sides as needed.
- Gradually add water and blend until desired consistency is reached.
- Taste and adjust seasoning if necessary.

- Garnish with pumpkin seeds if desired.
