Ingredients

  • Cleaned Ingredients:
  • 1 medium head cauliflower (600g)
  • 3-4 garlic cloves, peel left on but end trimmed
  • 1/2 medium sweet onion, sliced
  • 2-3 tablespoons (38 ml) vegetable oil
  • kosher salt and ground black pepper, to taste
  • 2-3 tablespoons (38 ml) vegetable margarine
  • 3 tablespoons (45 ml) coconut cream
  • your favorite cheese (cheddar, fontina, vegan parmesan, vegan cream cheese)
  • vegetarian bacon bits
  • vegan sour cream
  • fresh herbs (thyme, chives, Italian parsley, etc.)
  • a squeeze of lemon


Instructions

  1. Set your oven to a temperature of 450°F.
  2. Spread cauliflower pieces, garlic cloves with their skins still on, and onion slices onto a large baking tray. Pour vegetable oil over them, season with kosher salt and black pepper as desired, and mix thoroughly with your hands until everything is well-coated.
  3. Lay the vegetables evenly on the tray and place it in the oven. Roast them for 20-25 minutes, or until the cauliflower is soft and slightly browned at the edges.
  4. Once roasting is complete, press the garlic out of its skins. Move the cauliflower, onions, and garlic to a food processor or high-speed blender. Add vegetable margarine and blend until smooth. (Alternatively, you can put all the vegetables in a pot and use an immersion blender for the mash.)
  5. Gradually incorporate coconut cream, one tablespoon at a time, while continuing to blend until you reach the creamy mashed cauliflower texture you prefer. Depending on the size of your cauliflower, you might not need the entire amount of cream. Don’t forget to add any of your favorite cheese, vegetarian bacon bits, vegan sour cream, fresh herbs, or a squeeze of lemon if desired!
  6. If you need to warm the mash, move it to a pot and heat over medium-low until it’s hot. Then, enjoy your dish!

Notes

  • Enhance the flavor by mixing different cheeses like cheddar, fontina, or vegan parmesan in the mashed cauliflower.
