Ingredients
- 2 tablespoons vegetable oil (30 ml)
- 1 large head of cauliflower, chopped
- 2 apples, peeled, cored, and diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups vegetable broth (950 ml)
- 1 teaspoon (5 ml) dried thyme
- Salt, to taste
- Pepper, to taste
- 1 cup coconut milk (240 ml)
- Optional: Fresh thyme leaves for garnish
Instructions
- Preheat the oven to 425°F (220°C).
- Place chopped cauliflower on a baking sheet.
- Drizzle 1 tablespoon of olive oil over the cauliflower.
- Season cauliflower with salt and pepper.
- Roast cauliflower for 25-30 minutes until golden and tender.
- Heat 1 tablespoon of olive oil in a large pot over medium heat.
- Add chopped onion and minced garlic to the pot.
- Sauté onion and garlic for 3-4 minutes until softened.
- Add diced apples to the pot and cook for another 2 minutes.
- Pour in the vegetable broth.
- Add roasted cauliflower to the pot.
- Stir in 1 teaspoon of dried thyme.
- Season with salt and pepper to taste.
- Bring the mixture to a boil.
- Reduce heat to a simmer and cook for 15 minutes.
- Remove the pot from heat.
- Use an immersion blender to purée the soup until smooth.
- Stir in 1 cup of coconut milk.
- Return the pot to low heat and warm the soup gently.
- Taste and adjust seasoning if needed.
- Serve hot, garnished with fresh thyme leaves if desired.
