Ingredients
- 12 medium carrots (about 900g) peeled and sliced lengthwise
- 1 tablespoon (15ml) vegetable oil
- 1/2 teaspoon (3 ml) salt
- 1 1/2 teaspoons (8 ml) fresh thyme leaves
- 1 1/2 teaspoons (8 ml) hot honey
- 2/3 cup (160ml) ricotta cheese
- 1 tablespoon (15ml) vegetable oil
- 1 teaspoon (5 ml) freshly grated lemon zest
- 1 teaspoon (5 ml) freshly squeezed lemon juice
- Salt to taste
Instructions
- Turn on your oven to 425°F (220°C) and prepare a baking tray with parchment paper or foil to simplify cleaning later.
- Put the lengthwise-cut carrots into a large bowl. Drizzle with vegetable oil, sprinkle with salt, and add fresh thyme leaves. Mix thoroughly to ensure the carrots are well-coated.
- Place the coated carrots on the lined baking tray in one even layer. Cook them in the oven for 20 to 30 minutes, or until they become soft and begin to caramelize at the edges. Once done, take them out and let them cool slightly.
- As the carrots are cooking, blend together ricotta cheese, vegetable oil, lemon zest, lemon juice, and a bit of salt in a food processor. Process until the mixture is light and smooth. Taste and adjust the seasoning if needed.
- Spread the creamy ricotta mixture on a serving dish or shallow bowl. Lay the roasted carrots on top of the ricotta. Before serving, drizzle them with hot honey. If you like, add more thyme leaves as a garnish.
