Ingredients
- 1 1/2 pounds (680 g) carrots, small to medium carrots are best
- 2 tablespoons (30 ml) vegetable oil
- 1 tablespoon (15 ml) fresh thyme
- 1 teaspoon (5 ml) sea salt
- 1/2 teaspoon (2.5 ml) cracked black pepper
- Whipped Feta
- Agave honey or honey, for drizzling
- 1/4 cup (60 ml) chopped pistachios
- Chopped fresh parsley, chives, and/or dill, for garnish
Instructions
- Fire up the oven to 425°F and prepare a big baking tray with parchment paper.
- Clean the carrots thoroughly and cut off the tops. If they’re large, slice them lengthwise. Arrange the carrots on the tray, pour vegetable oil over them, and toss to coat well. Sprinkle with thyme, sea salt, and cracked black pepper.
- Bake the carrots for 18 to 27 minutes, based on their size. Stir them halfway through cooking. They should be tender when pierced with a fork and have a caramelized exterior.
- As the carrots cook, prepare the whipped feta.
- Spread the whipped feta on a sizable serving dish. Lay the roasted carrots over the whipped feta. Drizzle with agave honey or honey, add chopped pistachios, and garnish with fresh parsley, chives, and/or dill.
- Serve right away and savor the flavors!
