Ingredients
- 2 large sweet potatoes
- 2 tablespoons vegetable oil (30 ml)
- 1 teaspoon salt (5 g)
- 1/2 teaspoon black pepper (1 g)
- 1 medium head of broccoli, cut into small florets
- 1 cup shredded cheddar cheese (about 4 oz or 113 g)
- 1/4 cup plain yogurt (60 ml)
- 2 tablespoons unsalted butter (28 g)
- 2 cloves garlic, minced
- 1/4 teaspoon smoked paprika (0.5 g)
- 1 tablespoon (15 ml) chopped fresh chives for garnish (optional)
Instructions
- Preheat the oven to 400°F (200°C).
- Wash and scrub the sweet potatoes thoroughly.
- Pierce each sweet potato several times with a fork.
- Rub 1 tablespoon of olive oil over the sweet potatoes.
- Sprinkle with 1/2 teaspoon of salt and 1/4 teaspoon of black pepper.
- Place the sweet potatoes on a baking sheet.
- Bake for 45-60 minutes, or until tender when pierced with a fork.
- While the sweet potatoes bake, toss broccoli florets with 1 tablespoon olive oil.
- Season the broccoli with 1/2 teaspoon salt and 1/4 teaspoon black pepper.
- Spread the broccoli on a separate baking sheet.
- Roast the broccoli in the oven for 15-20 minutes until tender and lightly browned.
- Melt the butter in a small pan over medium heat.
- Add minced garlic to the pan and sauté for 1-2 minutes until fragrant.
- Stir in the smoked paprika and remove from heat.
- When sweet potatoes are done, remove them from the oven and let cool slightly.
- Slice sweet potatoes open lengthwise and gently fluff the insides with a fork.
- Mix the roasted broccoli and cheddar cheese into the sweet potato flesh.
- Drizzle the garlic butter mixture over the stuffed sweet potatoes.
- Add a dollop of sour cream on top of each potato.
- Garnish with chopped fresh chives, if desired.
- Serve warm and enjoy.
