Ingredients

  • 2 large sweet potatoes
  • 2 tablespoons vegetable oil (30 ml)
  • 1 teaspoon salt (5 g)
  • 1/2 teaspoon black pepper (1 g)
  • 1 medium head of broccoli, cut into small florets
  • 1 cup shredded cheddar cheese (about 4 oz or 113 g)
  • 1/4 cup plain yogurt (60 ml)
  • 2 tablespoons unsalted butter (28 g)
  • 2 cloves garlic, minced
  • 1/4 teaspoon smoked paprika (0.5 g)
  • 1 tablespoon (15 ml) chopped fresh chives for garnish (optional)


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash and scrub the sweet potatoes thoroughly.
  3. Pierce each sweet potato several times with a fork.
  4. Rub 1 tablespoon of olive oil over the sweet potatoes.
  5. Sprinkle with 1/2 teaspoon of salt and 1/4 teaspoon of black pepper.
  6. Place the sweet potatoes on a baking sheet.
  7. Bake for 45-60 minutes, or until tender when pierced with a fork.
  8. While the sweet potatoes bake, toss broccoli florets with 1 tablespoon olive oil.
  9. Season the broccoli with 1/2 teaspoon salt and 1/4 teaspoon black pepper.
  10. Spread the broccoli on a separate baking sheet.
  11. Roast the broccoli in the oven for 15-20 minutes until tender and lightly browned.
  12. Melt the butter in a small pan over medium heat.
  13. Add minced garlic to the pan and sauté for 1-2 minutes until fragrant.
  14. Stir in the smoked paprika and remove from heat.
  15. When sweet potatoes are done, remove them from the oven and let cool slightly.
  16. Slice sweet potatoes open lengthwise and gently fluff the insides with a fork.
  17. Mix the roasted broccoli and cheddar cheese into the sweet potato flesh.
  18. Drizzle the garlic butter mixture over the stuffed sweet potatoes.
  19. Add a dollop of sour cream on top of each potato.
  20. Garnish with chopped fresh chives, if desired.
  21. Serve warm and enjoy.
