Ingredients

  • 2 medium beets
  • 1 tablespoon olive oil (15 ml)
  • 1 teaspoon salt (5 g)
  • 1/2 teaspoon black pepper (1 g)
  • 8 ounces feta cheese (225 g)
  • 1 tablespoon maple syrup (15 ml)
  • 1 tablespoon chopped fresh chives (15 g)
  • 1/4 cup chopped walnuts (30 g)


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash and trim the beets, then wrap each in aluminum foil.
  3. Place the wrapped beets on a baking sheet.
  4. Roast in the oven for 45-60 minutes until tender.
  5. Remove the beets from the oven and let them cool.
  6. Peel the cooled beets and cut them into small cubes.
  7. In a bowl, toss beet cubes with olive oil, salt, and black pepper.
  8. Spread the beet mixture evenly on a plate or tray.
  9. In another bowl, mix goat cheese and honey until smooth.
  10. Shape the goat cheese mixture into a log.
  11. Roll the goat cheese log in the beet mixture until completely coated.
  12. Sprinkle chopped chives and walnuts over the coated log.
  13. Gently press the chives and walnuts to adhere to the log.
  14. Chill the log in the refrigerator for at least 30 minutes.
  15. Slice and serve the Roasted Beet and Goat Cheese Log.
