Ingredients
- 2 medium beets
- 1 tablespoon olive oil (15 ml)
- 1 teaspoon salt (5 g)
- 1/2 teaspoon black pepper (1 g)
- 8 ounces feta cheese (225 g)
- 1 tablespoon maple syrup (15 ml)
- 1 tablespoon chopped fresh chives (15 g)
- 1/4 cup chopped walnuts (30 g)
Instructions
- Preheat the oven to 400°F (200°C).
- Wash and trim the beets, then wrap each in aluminum foil.
- Place the wrapped beets on a baking sheet.
- Roast in the oven for 45-60 minutes until tender.
- Remove the beets from the oven and let them cool.
- Peel the cooled beets and cut them into small cubes.
- In a bowl, toss beet cubes with olive oil, salt, and black pepper.
- Spread the beet mixture evenly on a plate or tray.
- In another bowl, mix goat cheese and honey until smooth.
- Shape the goat cheese mixture into a log.
- Roll the goat cheese log in the beet mixture until completely coated.
- Sprinkle chopped chives and walnuts over the coated log.
- Gently press the chives and walnuts to adhere to the log.
- Chill the log in the refrigerator for at least 30 minutes.
