Ingredients

  • 2 medium beets
  • 2 tablespoons vegetable oil (30 ml)
  • 1/4 teaspoon salt (1.5 g)
  • 1/4 teaspoon black pepper (0.5 g)
  • 3 cups mixed salad greens (about 180 g)
  • 1 orange, peeled and segmented
  • 1 grapefruit, peeled and segmented
  • 4 ounces feta cheese, crumbled (about 113 g)
  • 1/4 cup walnuts, toasted and chopped (30 g)
  • 2 tablespoons balsamic vinaigrette dressing (30 ml)


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash and trim the beets, removing any greens.
  3. Wrap each beet in aluminum foil.
  4. Place the wrapped beets on a baking sheet.
  5. Roast in the oven for 45-60 minutes or until tender.
  6. Remove the beets from the oven and let them cool.
  7. Once cool, peel the beets and slice them into thin wedges.
  8. In a large bowl, add the salad greens.
  9. Add the orange and grapefruit segments to the greens.
  10. Add the sliced beets to the salad.
  11. Sprinkle the crumbled goat cheese over the salad.
  12. Add the toasted and chopped walnuts.
  13. Drizzle the balsamic vinaigrette over the salad.
  14. Toss the salad gently to combine all ingredients.
  15. Serve immediately.
