Ingredients
- 2 medium beets
- 2 tablespoons vegetable oil (30 ml)
- 1/4 teaspoon salt (1.5 g)
- 1/4 teaspoon black pepper (0.5 g)
- 3 cups mixed salad greens (about 180 g)
- 1 orange, peeled and segmented
- 1 grapefruit, peeled and segmented
- 4 ounces feta cheese, crumbled (about 113 g)
- 1/4 cup walnuts, toasted and chopped (30 g)
- 2 tablespoons balsamic vinaigrette dressing (30 ml)
Instructions
- Preheat the oven to 400°F (200°C).
- Wash and trim the beets, removing any greens.
- Wrap each beet in aluminum foil.
- Place the wrapped beets on a baking sheet.
- Roast in the oven for 45-60 minutes or until tender.
- Remove the beets from the oven and let them cool.
- Once cool, peel the beets and slice them into thin wedges.
- In a large bowl, add the salad greens.
- Add the orange and grapefruit segments to the greens.
- Add the sliced beets to the salad.
- Sprinkle the crumbled goat cheese over the salad.
- Add the toasted and chopped walnuts.
- Drizzle the balsamic vinaigrette over the salad.
- Toss the salad gently to combine all ingredients.
- Serve immediately.
