Ingredients

  • 4 bone-in chicken thighs (about 680 g)
  • 2 large apples, cored and sliced
  • 1 large fennel bulb, sliced
  • 1 tablespoon olive oil (15 ml)
  • 1 teaspoon salt (5 g)
  • 1/2 teaspoon black pepper (1 g)
  • 1 teaspoon dried thyme (1 g)
  • 2 cloves garlic, minced
  • 1 tablespoon honey (15 ml)
  • 1 tablespoon lemon juice (15 ml)
  • 1/2 cup chicken broth (120 ml)


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Pat the chicken thighs dry with paper towels.
  3. Season the chicken with salt, black pepper, and dried thyme.
  4. Heat olive oil in a large oven-safe skillet over medium-high heat.
  5. Add the chicken thighs, skin-side down, and sear until golden brown, about 5 minutes.
  6. Flip the chicken over and cook for an additional 2 minutes.
  7. Remove the chicken from the skillet and set aside.
  8. In the same skillet, add the sliced apples and fennel.
  9. Sauté for 3-4 minutes until they begin to soften.
  10. Stir in the minced garlic and cook for 1 minute.
  11. Add honey and lemon juice to the skillet, stirring to combine.
  12. Pour in the chicken broth and bring to a simmer.
  13. Nestle the chicken thighs back into the skillet, skin-side up.
  14. Transfer the skillet to the preheated oven.
  15. Roast for 25-30 minutes until the chicken is cooked through.
  16. Remove from the oven and let rest for 5 minutes before serving.
