Ingredients
- 4 bone-in chicken thighs (about 680 g)
- 2 large apples, cored and sliced
- 1 large fennel bulb, sliced

- 1 teaspoon salt (5 g)
- 1/2 teaspoon black pepper (1 g)
- 1 teaspoon dried thyme (1 g)
- 2 cloves garlic, minced
- 1 tablespoon honey (15 ml)
- 1 tablespoon lemon juice (15 ml)
- 1/2 cup chicken broth (120 ml)
Instructions
- Preheat the oven to 400°F (200°C).
- Pat the chicken thighs dry with paper towels.
- Season the chicken with salt, black pepper, and dried thyme.
- Heat olive oil in a large oven-safe skillet over medium-high heat.
- Add the chicken thighs, skin-side down, and sear until golden brown, about 5 minutes.
- Flip the chicken over and cook for an additional 2 minutes.
- Remove the chicken from the skillet and set aside.
- In the same skillet, add the sliced apples and fennel.
- Sauté for 3-4 minutes until they begin to soften.
- Stir in the minced garlic and cook for 1 minute.
- Add honey and lemon juice to the skillet, stirring to combine.
- Pour in the chicken broth and bring to a simmer.
- Nestle the chicken thighs back into the skillet, skin-side up.
- Transfer the skillet to the preheated oven.
- Roast for 25-30 minutes until the chicken is cooked through.
- Remove from the oven and let rest for 5 minutes before serving.
