Ingredients
- 2 cups uncooked basmati rice
- 1½ cups coconut milk
- 1 cup chicken broth
- ¼ cup cilantro (chopped)
- 1 lime (juiced)
- Salt and pepper to taste
Instructions
- Rinse uncooked basmati rice until water runs clear. Drain any excess water.
- Add rice, coconut milk, and chicken broth to the rice cooker pot.
- Cook on the quick setting or white rice setting.
- Open the rice maker and allow it to sit for about 5 to 10 minutes for steam to fully release.
- Stir in lime juice, and season with salt and pepper to taste.
- Garnish with fresh cilantro and serve.
Notes
Rinse basmati rice thoroughly to avoid gummy texture. For a richer flavor, replace some chicken broth with additional coconut milk. Adjust lime juice to taste.
