Description

This rice cooker coconut rice features a luscious blend of basmati rice, creamy coconut milk, and savory chicken broth, making it an extraordinary side dish perfect for any weeknight dinner.


Ingredients

  • 2 cups uncooked basmati rice
  • 1½ cups coconut milk
  • 1 cup chicken broth
  • ¼ cup cilantro (chopped)
  • 1 lime (juiced)
  • Salt and pepper to taste


Instructions

  1. Rinse uncooked basmati rice until water runs clear. Drain any excess water.
  2. Add rice, coconut milk, and chicken broth to the rice cooker pot.
  3. Cook on the quick setting or white rice setting.
  4. Open the rice maker and allow it to sit for about 5 to 10 minutes for steam to fully release.
  5. Stir in lime juice, and season with salt and pepper to taste.
  6. Garnish with fresh cilantro and serve.

Notes

Rinse basmati rice thoroughly to avoid gummy texture. For a richer flavor, replace some chicken broth with additional coconut milk. Adjust lime juice to taste.
