Description

Delightful Raspberry Lamingtons featuring fluffy cake layered with raspberry jam and coated in coconut.


Ingredients

  • 1/2 cup Butter
  • 1 cup Sugar
  • 3 Eggs
  • 1 teaspoon Vanilla extract
  • 1 1/2 cups Flour
  • 1 teaspoon Baking powder
  • 1/2 cup Milk
  • 1 cup Raspberry jam
  • 1 cup Coconut flakes


Instructions

  1. Start by creaming together the butter and sugar in a bowl until the mixture becomes light and fluffy.
  2. Add the eggs, one at a time, beating well after each addition. Mix in the vanilla extract until combined.
  3. In a separate bowl, whisk together the flour and baking powder. Gradually add this to the creamed mixture, alternating with the milk. Mix until just combined.
  4. Pour the batter into the prepared dish, spreading it evenly.
  5. Bake for about 25-30 minutes or until a toothpick comes out clean when tested.
  6. Let the cake cool completely before cutting it into squares.
  7. To make the raspberry glaze, heat the raspberry jam until melted.
  8. Dip each square in the glaze and then roll in coconut flakes, coating them completely. Allow to set before serving.

Notes

Measure flour by spooning it into a cup to prevent density. If the raspberry jam is thick, warm it for easier dipping.
