Delightful Raspberry Lamingtons featuring fluffy cake layered with raspberry jam and coated in coconut.
Ingredients
- 1/2 cup Butter
- 1 cup Sugar
- 3 Eggs
- 1 teaspoon Vanilla extract
- 1 1/2 cups Flour
- 1 teaspoon Baking powder
- 1/2 cup Milk
- 1 cup Raspberry jam
- 1 cup Coconut flakes
Instructions
- Start by creaming together the butter and sugar in a bowl until the mixture becomes light and fluffy.
- Add the eggs, one at a time, beating well after each addition. Mix in the vanilla extract until combined.
- In a separate bowl, whisk together the flour and baking powder. Gradually add this to the creamed mixture, alternating with the milk. Mix until just combined.
- Pour the batter into the prepared dish, spreading it evenly.
- Bake for about 25-30 minutes or until a toothpick comes out clean when tested.
- Let the cake cool completely before cutting it into squares.
- To make the raspberry glaze, heat the raspberry jam until melted.
- Dip each square in the glaze and then roll in coconut flakes, coating them completely. Allow to set before serving.
Notes
Measure flour by spooning it into a cup to prevent density. If the raspberry jam is thick, warm it for easier dipping.
