Description

A vibrant and nutritious raspberry chia pudding sweetened naturally with maple syrup, perfect for any time of the day.


Ingredients

  • 1/4 cup chia seeds
  • 1 cup unsweetened almond milk
  • 2 tablespoons pure maple syrup
  • 1/2 teaspoon vanilla extract
  • 1 cup fresh raspberries (for pudding and topping)
  • Sliced almonds or chopped nuts (for topping)
  • Shredded coconut (for topping)


Instructions

  1. In a bowl, mix chia seeds, almond milk, maple syrup, and vanilla extract until well combined.
  2. In a separate bowl, mash the raspberries, then fold them into the chia mixture gently.
  3. Cover and refrigerate for at least 240 minutes (4 hours) or overnight to allow the chia seeds to swell.
  4. When ready to serve, divide the pudding into bowls, top with additional raspberries, nuts, coconut, and drizzle with extra maple syrup.
