Description

A comforting one-pan meal that combines tender chicken, vibrant vegetables, and ranch flavor, perfect for busy weeknights or special occasions.


Ingredients

  • 1.5 lbs boneless skinless chicken, cubed
  • 2 cups halved baby potatoes
  • 4 cups broccoli florets
  • 2 cups baby carrots
  • 2.5 tablespoons olive oil (or avocado oil)
  • 1/2 cup grated Parmesan cheese
  • 1 packet (~4 tablespoons Hidden Valley® Ranch Dip Mix)
  • Salt & pepper to taste


Instructions

  1. Preheat the oven to 400°F.
  2. Prepare a lined, rimmed baking sheet with foil or parchment paper.
  3. Combine the chicken, veggies, and olive oil in a large bowl or ziplock bag. Shake to coat evenly.
  4. Add the Parmesan cheese, ranch dip mix, salt, and pepper. Shake again until well coated.
  5. Pour the mixture onto the prepared baking sheet.
  6. Bake for 25-27 minutes, flipping halfway through.
  7. Serve warm and enjoy!

Notes

For added flavor, marinate chicken in olive oil and ranch seasoning for a few hours before baking. Experiment with different vegetables to suit your family’s preferences.
