Ingredients

  • 1 cup cherry tomatoes, halved (150 g)
  • 2 tablespoons olive oil (30 ml)
  • 1 teaspoon salt (5 g)
  • 1/2 teaspoon black pepper (1 g)
  • 1 teaspoon garlic powder (3 g)
  • 1 teaspoon smoked paprika (3 g)
  • 1 teaspoon dried oregano (1 g)
  • 1 cup baby spinach (30 g)
  • 1 avocado, sliced
  • 1/4 cup chopped fresh parsley (15 g)
  • 1/4 cup crumbled goat cheese (40 g)
  • 1 tablespoon fresh lemon juice (15 ml)


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Rinse the quinoa under cold water using a fine-mesh strainer.
  3. In a medium saucepan, combine quinoa and water.
  4. Bring to a boil over medium-high heat.
  5. Once boiling, reduce heat to low, cover, and simmer for 15 minutes.
  6. Remove quinoa from heat and let it sit covered for 5 minutes.
  7. Fluff the quinoa with a fork and set aside.
  8. On a baking sheet, combine red bell pepper, yellow bell pepper, zucchini, red onion, and cherry tomatoes.
  9. Drizzle vegetables with olive oil.
  10. Sprinkle salt, black pepper, garlic powder, smoked paprika, and dried oregano over the vegetables.
  11. Toss vegetables to coat evenly with oil and spices.
  12. Spread vegetables in a single layer on the baking sheet.
  13. Roast in the preheated oven for 20-25 minutes, until tender and slightly caramelized.
  14. In a large bowl, combine cooked quinoa and roasted vegetables.
  15. Add baby spinach and gently toss to combine.
  16. Top the mixture with sliced avocado.
  17. Sprinkle with chopped parsley and crumbled feta cheese.
