Ingredients
- 1 cup (170g) quinoa
- 2 cups (475ml) water
- 1/2 teaspoon (3 ml) salt
- 1 cup (150g) cherry tomatoes, halved
- 1 cup (150g) cucumber, diced
- 1/4 cup (35g) red onion, finely chopped
- 1/2 cup (75g) bell pepper, diced
- 1/4 cup (15g) fresh parsley, chopped
- 1/4 cup (40g) black olives, pitted and sliced
- 1/4 cup (30g) crumbled goat cheese
- 2 tablespoons (30ml) olive oil
- 1 tablespoon (15ml) lemon juice
- 1/4 teaspoon (1 ml) black pepper
Instructions
- Rinse the quinoa under cold water using a fine-mesh strainer.
- In a medium saucepan, combine quinoa, water, and salt.
- Bring to a boil over medium-high heat.
- Reduce heat to low, cover, and simmer for 15 minutes.
- Remove from heat and let it stand, covered, for 5 minutes.
- Fluff the quinoa with a fork and let it cool completely.
- In a large bowl, combine cherry tomatoes, cucumber, red onion, bell pepper, parsley, olives, and feta cheese.
- In a small bowl, whisk together olive oil, lemon juice, and black pepper.
- Pour the dressing over the vegetable mixture and toss to combine.
- Layer the cooled quinoa and vegetable mixture in jars, starting with quinoa.
- Seal the jars tightly with lids.
- Store in the refrigerator until ready to serve.
