Ingredients

  • 1 cup (170g) quinoa
  • 2 cups (475ml) water
  • 1/2 teaspoon (3 ml) salt
  • 1 cup (150g) cherry tomatoes, halved
  • 1 cup (150g) cucumber, diced
  • 1/4 cup (35g) red onion, finely chopped
  • 1/2 cup (75g) bell pepper, diced
  • 1/4 cup (15g) fresh parsley, chopped
  • 1/4 cup (40g) black olives, pitted and sliced
  • 1/4 cup (30g) crumbled goat cheese
  • 2 tablespoons (30ml) olive oil
  • 1 tablespoon (15ml) lemon juice
  • 1/4 teaspoon (1 ml) black pepper


Instructions

  1. Rinse the quinoa under cold water using a fine-mesh strainer.
  2. In a medium saucepan, combine quinoa, water, and salt.
  3. Bring to a boil over medium-high heat.
  4. Reduce heat to low, cover, and simmer for 15 minutes.
  5. Remove from heat and let it stand, covered, for 5 minutes.
  6. Fluff the quinoa with a fork and let it cool completely.
  7. In a large bowl, combine cherry tomatoes, cucumber, red onion, bell pepper, parsley, olives, and feta cheese.
  8. In a small bowl, whisk together olive oil, lemon juice, and black pepper.
  9. Pour the dressing over the vegetable mixture and toss to combine.
  10. Layer the cooled quinoa and vegetable mixture in jars, starting with quinoa.
  11. Seal the jars tightly with lids.
  12. Store in the refrigerator until ready to serve.
