Ingredients

  • 1 delicata squash
  • 1 tablespoon olive oil (15 ml)
  • Salt, to taste
  • Black pepper, to taste
  • 1 cup (240 ml) quinoa (180 grams)
  • 2 cups vegetable broth (480 ml)
  • 1/2 cup (120 ml) dried cranberries (60 grams)
  • 1 bunch kale, chopped
  • 1/4 cup (60 ml) chopped walnuts (30 grams)
  • 1/2 teaspoon (3 ml) ground cinnamon (1.5 grams)
  • 1 tablespoon lemon juice (15 ml)
  • 1/4 cup (60 ml) crumbled cheese (optional) (40 grams)


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Cut the delicata squash in half lengthwise and remove the seeds.
  3. Brush the cut sides of the squash with olive oil and season with salt and pepper.
  4. Place the squash halves on a baking sheet, cut side down.
  5. Roast the squash in the oven for 25-30 minutes until tender.
  6. While the squash is roasting, rinse the quinoa under cold water.
  7. In a medium saucepan, bring the vegetable broth to a boil.
  8. Add the quinoa to the boiling broth, reduce heat to low, and cover.
  9. Simmer the quinoa for about 15 minutes or until the liquid is absorbed.
  10. Remove the saucepan from heat and let the quinoa sit, covered, for 5 minutes.
  11. Fluff the quinoa with a fork and stir in the dried cranberries.
  12. In a skillet, heat a little olive oil over medium heat.
  13. Add the chopped kale to the skillet and sauté until wilted.
  14. Stir the sautéed kale into the quinoa mixture.
  15. Add the chopped walnuts and ground cinnamon to the quinoa mixture.
  16. Stir in the lemon juice and mix until well combined.
  17. Remove the roasted squash from the oven and let cool slightly.
  18. Fill each squash half with the quinoa mixture.
  19. Optional: Sprinkle crumbled feta cheese over the stuffed squash.
  20. Return the stuffed squash to the oven and bake for an additional 5-10 minutes.
  21. Remove from the oven, let cool slightly, and serve warm.
