Ingredients
- 1 delicata squash
- 1 tablespoon olive oil (15 ml)
- Salt, to taste
- Black pepper, to taste
- 1 cup (240 ml) quinoa (180 grams)
- 2 cups vegetable broth (480 ml)
- 1/2 cup (120 ml) dried cranberries (60 grams)
- 1 bunch kale, chopped
- 1/4 cup (60 ml) chopped walnuts (30 grams)
- 1/2 teaspoon (3 ml) ground cinnamon (1.5 grams)
- 1 tablespoon lemon juice (15 ml)
- 1/4 cup (60 ml) crumbled cheese (optional) (40 grams)
Instructions
- Preheat the oven to 400°F (200°C).
- Cut the delicata squash in half lengthwise and remove the seeds.
- Brush the cut sides of the squash with olive oil and season with salt and pepper.
- Place the squash halves on a baking sheet, cut side down.
- Roast the squash in the oven for 25-30 minutes until tender.
- While the squash is roasting, rinse the quinoa under cold water.
- In a medium saucepan, bring the vegetable broth to a boil.
- Add the quinoa to the boiling broth, reduce heat to low, and cover.
- Simmer the quinoa for about 15 minutes or until the liquid is absorbed.
- Remove the saucepan from heat and let the quinoa sit, covered, for 5 minutes.
- Fluff the quinoa with a fork and stir in the dried cranberries.
- In a skillet, heat a little olive oil over medium heat.
- Add the chopped kale to the skillet and sauté until wilted.
- Stir the sautéed kale into the quinoa mixture.
- Add the chopped walnuts and ground cinnamon to the quinoa mixture.
- Stir in the lemon juice and mix until well combined.
- Remove the roasted squash from the oven and let cool slightly.
- Fill each squash half with the quinoa mixture.
- Optional: Sprinkle crumbled feta cheese over the stuffed squash.
- Return the stuffed squash to the oven and bake for an additional 5-10 minutes.
- Remove from the oven, let cool slightly, and serve warm.
