Description

Transform your sourdough discard into delightful garlic knots that are perfect for any gathering.


Ingredients

  • 1 cup sourdough discard
  • 2 cups all-purpose flour
  • 2 cloves garlic, minced
  • 1/4 cup olive oil
  • 1 teaspoon salt
  • 1 teaspoon sugar
  • 1 teaspoon dried Italian herbs (optional)
  • 1/4 cup grated Parmesan cheese (optional)
  • 1/4 cup melted butter (for brushing)


Instructions

  1. In a large bowl, mix the sourdough discard, olive oil, salt, sugar, and minced garlic until fully combined.
  2. Gradually add in the flour and mix until a dough forms.
  3. Knead the dough on a floured surface for about 5 minutes until it becomes smooth.
  4. Divide the dough into equal pieces and roll each piece into a knot shape.
  5. Place the knots on a baking sheet lined with parchment paper.
  6. Brush the knots with melted butter and sprinkle with Parmesan cheese and Italian herbs if using.
  7. Preheat the oven to 375°F (190°C) and bake for 15-20 minutes until golden brown.
  8. Let them cool slightly before serving.

Notes

Use room temperature sourdough discard for easier mixing. Consider letting the knots rise for a shorter time if you’re short on time.
