Description

Delightful and easy-to-make cucumber salad sandwiches that offer a refreshing crunch with a creamy spread.


Ingredients

  • 2 large cucumbers
  • 4 ounces cream cheese
  • 1/4 cup Greek yogurt
  • 1 tablespoon fresh dill (or 1 teaspoon dried dill)
  • 1 tablespoon lemon juice
  • Salt and pepper to taste
  • Whole grain or sandwich bread


Instructions

  1. Slice the cucumbers thinly and set aside.
  2. Mix cream cheese, Greek yogurt, dill, lemon juice, salt, and pepper until smooth.
  3. Spread the cream cheese mixture on a slice of bread.
  4. Layer cucumber slices on top and cover with another slice of bread.
  5. Cut them into halves or quarters and serve immediately or refrigerate until serving.

Notes

For added flavor, chill the cream cheese mixture and garnish with additional dill or paprika.
