Description

A vibrant and comforting dessert made with small tapioca pearls and ube halaya, perfect for family gatherings.


Ingredients

  • 2/3 cup small tapioca pearls
  • 1/3 cup ube halaya (up to 1/2 cup for extra sweetness)
  • 1/2 cup milk
  • 3/4 cup coconut milk
  • 1/2 teaspoon ube extract
  • 1/2 teaspoon vanilla extract
  • Chopped fruit (strawberries, peaches, or mango for topping)


Instructions

  1. Bring a medium pot of water to a rolling boil.
  2. Add the tapioca pearls and stir them briefly to prevent sticking.
  3. Lower the heat and let the pearls boil for 25 minutes until completely translucent.
  4. Drain and rinse the pearls in cold water, then soak them in a bowl of cold water.
  5. In a large bowl, incorporate the ube halaya and gradually whisk in the coconut milk until fully blended.
  6. Add the remaining ingredients, stir until smooth, and then drain the tapioca pearls again and add them to the mixture.
  7. Serve immediately or refrigerate for an hour if you prefer it chilled.
  8. Optionally, top with fresh chopped fruit before enjoying.

Notes

Chilling the dessert enhances its flavor and texture. Experiment with different fruit toppings to personalize each serving.
