  • 1 cup chopped onion (240 ml)

  • 1/2 cup chopped yellow bell pepper (120 ml)
  • 1 clove garlic, minced
  • 1 pound ground beef (450 g)
  • 1 (14.5 ounce) can diced tomatoes (411 g)
  • 2 cups pumpkin puree (480 ml)
  • 5 tablespoons (23 ml) chili powder
  • 1/2 teaspoon ground black pepper (2.5 ml)
  • 1 dash salt
  • 1/2 cup shredded mozzarella cheese (120 g)
  • 1/2 cup (120 ml) plain yogurt


Instructions

  1. Warm the vegetable oil in a sizable pan over medium heat. Add the onion, green bell pepper, yellow bell pepper, and garlic; cook and stir until they are soft.
  2. Add the ground beef and cook until it is uniformly browned; drain any excess fat.
  3. Incorporate the diced tomatoes and pumpkin puree. Add the chili powder, black pepper, and a pinch of salt for seasoning. Lower the heat, place a lid on the pan, and let it simmer for 15 to 20 minutes.
  4. Serve the dish with shredded mozzarella cheese and a dollop of plain yogurt on top.
