Ingredients
- 1 tablespoon vegetable oil (15 ml)
- 1 cup chopped onion (240 ml)
- 1/2 cup chopped green bell pepper (120 ml)
- 1/2 cup chopped yellow bell pepper (120 ml)
- 1 clove garlic, minced
- 1 pound ground beef (450 g)
- 1 (14.5 ounce) can diced tomatoes (411 g)
- 2 cups pumpkin puree (480 ml)
- 5 tablespoons (23 ml) chili powder
- 1/2 teaspoon ground black pepper (2.5 ml)
- 1 dash salt
- 1/2 cup shredded mozzarella cheese (120 g)
- 1/2 cup (120 ml) plain yogurt
Instructions
- Warm the vegetable oil in a sizable pan over medium heat. Add the onion, green bell pepper, yellow bell pepper, and garlic; cook and stir until they are soft.
- Add the ground beef and cook until it is uniformly browned; drain any excess fat.
- Incorporate the diced tomatoes and pumpkin puree. Add the chili powder, black pepper, and a pinch of salt for seasoning. Lower the heat, place a lid on the pan, and let it simmer for 15 to 20 minutes.
- Serve the dish with shredded mozzarella cheese and a dollop of plain yogurt on top.
