  • 1/2 cup canned pumpkin puree (120g)
  • 1/2 cup crumbled feta cheese (75g)
  • 1 teaspoon garlic powder (2g)
  • 1 teaspoon onion powder (2g)
  • 1 teaspoon dried oregano (1g)
  • 1 teaspoon salt (6g)
  • 1/2 teaspoon black pepper (1g)
  • 2 tablespoons olive oil (30ml)


Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a bowl, mix the pumpkin puree, spinach, feta cheese, garlic powder, and onion powder.
  3. Add the dried oregano, salt, and black pepper to the mixture and stir well.
  4. Slice each chicken breast horizontally to create a pocket.
  5. Stuff the spinach and feta mixture into each chicken breast pocket.
