Ingredients

  • 1/2 cup (120 ml) smooth natural almond butter
  • 1/3 cup (80 ml) canned pumpkin
  • 1 teaspoon (5 ml) vanilla extract
  • 1 cup (240 ml) pitted dried dates, chopped (see Note)
  • 1/4 cup (60 ml) pecan halves
  • 1 1/4 cups (300 ml) old-fashioned rolled oats
  • 3 tablespoons (45 ml) toasted unsalted pepitas
  • 2 tablespoons (30 ml) chia seeds
  • 2 teaspoons (10 ml) pumpkin pie spice
  • 1/2 teaspoon (3 ml) salt


Instructions

  1. Combine the almond butter, canned pumpkin, and vanilla extract in a small bowl and mix well.
  2. In a food processor, blend the chopped dates and pecan halves until they are finely minced, around one minute.
  3. Introduce the rolled oats, toasted pepitas, chia seeds, pumpkin pie spice, and salt to the processor, and pulse about ten times until everything is thoroughly mixed.
  4. Incorporate the pumpkin mixture into the processor and continue pulsing for another ten times, ensuring a well-blended consistency. Pause to scrape the sides if necessary.
  5. Prepare a large baking sheet by lining it with parchment paper. Using a tablespoon cookie scoop or a measuring spoon, portion out 24 scoops of the oat mixture onto the prepared sheet.
  6. With clean hands, shape each portion into a ball.
  7. Enjoy right away, or store them covered in the fridge for up to five days.

Notes

  • Use smooth natural almond butter for a creamy texture.
  • Pulse dates and pecans together to bind ingredients.
