Ingredients
- 1/2 cup (120 ml) smooth natural almond butter
- 1/3 cup (80 ml) canned pumpkin
- 1 teaspoon (5 ml) vanilla extract
- 1 cup (240 ml) pitted dried dates, chopped (see Note)
- 1/4 cup (60 ml) pecan halves
- 1 1/4 cups (300 ml) old-fashioned rolled oats
- 3 tablespoons (45 ml) toasted unsalted pepitas
- 2 tablespoons (30 ml) chia seeds
- 2 teaspoons (10 ml) pumpkin pie spice
- 1/2 teaspoon (3 ml) salt
Instructions
- Combine the almond butter, canned pumpkin, and vanilla extract in a small bowl and mix well.
- In a food processor, blend the chopped dates and pecan halves until they are finely minced, around one minute.
- Introduce the rolled oats, toasted pepitas, chia seeds, pumpkin pie spice, and salt to the processor, and pulse about ten times until everything is thoroughly mixed.
- Incorporate the pumpkin mixture into the processor and continue pulsing for another ten times, ensuring a well-blended consistency. Pause to scrape the sides if necessary.
- Prepare a large baking sheet by lining it with parchment paper. Using a tablespoon cookie scoop or a measuring spoon, portion out 24 scoops of the oat mixture onto the prepared sheet.
- With clean hands, shape each portion into a ball.
- Enjoy right away, or store them covered in the fridge for up to five days.
