Ingredients
- 450 g ground beef
- 15 ml vegetable oil
- 1 medium onion, chopped
- 1 red bell pepper, chopped
- 2 cloves garlic, minced
- 1 g dried sage
- 1 g salt
- 5 g black pepper
- 480 ml coconut milk
- 6 large eggs
- 230 g shredded cheddar cheese
- 375 g mashed sweet potatoes
- 210 g cubed day-old bread
- 10 g chopped fresh parsley
Instructions
- Preheat the oven to 350°F (175°C).
- Heat olive oil in a large skillet over medium heat.
- Add ground turkey sausage to the skillet and cook until browned.
- Remove cooked sausage from the skillet and set aside.
- In the same skillet, add chopped onion and red bell pepper.
- Cook until the onion is translucent and peppers are softened.
- Add minced garlic, dried sage, salt, and black pepper to the skillet.
- Stir well and cook for another minute.
- In a large mixing bowl, whisk together milk and eggs.
- Add shredded cheddar cheese and pumpkin puree to the egg mixture.
- Stir in the cooked sausage, onion, and pepper mixture.
- Add the cubed bread to the bowl and mix until fully combined.
- Pour the mixture into a greased 9×13-inch (23×33 cm) baking dish.
- Spread the mixture evenly in the baking dish.
- Bake in the preheated oven for 45-50 minutes or until set.
- Remove from oven and let cool for 10 minutes.
- Sprinkle chopped fresh parsley over the casserole before serving.
