Ingredients

  • 450 g ground beef
  • 15 ml vegetable oil
  • 1 medium onion, chopped
  • 1 red bell pepper, chopped
  • 2 cloves garlic, minced
  • 1 g dried sage
  • 1 g salt
  • 5 g black pepper
  • 480 ml coconut milk
  • 6 large eggs
  • 230 g shredded cheddar cheese
  • 375 g mashed sweet potatoes
  • 210 g cubed day-old bread
  • 10 g chopped fresh parsley


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Heat olive oil in a large skillet over medium heat.
  3. Add ground turkey sausage to the skillet and cook until browned.
  4. Remove cooked sausage from the skillet and set aside.
  5. In the same skillet, add chopped onion and red bell pepper.
  6. Cook until the onion is translucent and peppers are softened.
  7. Add minced garlic, dried sage, salt, and black pepper to the skillet.
  8. Stir well and cook for another minute.
  9. In a large mixing bowl, whisk together milk and eggs.
  10. Add shredded cheddar cheese and pumpkin puree to the egg mixture.
  11. Stir in the cooked sausage, onion, and pepper mixture.
  12. Add the cubed bread to the bowl and mix until fully combined.
  13. Pour the mixture into a greased 9×13-inch (23×33 cm) baking dish.
  14. Spread the mixture evenly in the baking dish.
  15. Bake in the preheated oven for 45-50 minutes or until set.
  16. Remove from oven and let cool for 10 minutes.
  17. Sprinkle chopped fresh parsley over the casserole before serving.
