Ingredients

  • – 1 box (340 g) jumbo pasta shells
  • – 1 can (425 g) pumpkin puree
  • – 2 cups (475 ml) whole milk ricotta cheese
  • – 1 cup (100 g) freshly grated Parmesan cheese
  • – 1 egg – beaten
  • – 3 cloves garlic – pressed or minced
  • – 2 tbsp (30 ml) chopped fresh sage
  • – 1 tsp (5 ml) salt
  • – 1/2 tsp (2.5 ml) black pepper
  • – Pinch of nutmeg
  • – Pinch of cinnamon
  • – 1 jar (425 g) marinara sauce


Instructions

  1. Set your oven to 350°F to preheat. Prepare two 9×13-inch baking dishes and a large plate or tray, then put them aside.
  2. In a large pot, bring salted water to a boil. Cook the jumbo pasta shells until they reach a firm texture as per the package’s guidelines. Drain, rinse with cold water, and arrange them on the plate or tray to cool down.
  3. As the shells cool, combine the pumpkin puree, ricotta, ¾ cup of the Parmesan, the beaten egg, garlic, sage, salt, pepper, nutmeg, and cinnamon in a big bowl.
  4. Distribute the marinara sauce evenly between the two baking dishes, using a spoon or spatula to spread it out. Gently open up a shell with your fingers and fill it with roughly 2 generous tablespoons of the pumpkin ricotta mixture using a small spoon (or a piping bag if available). Place the stuffed shell into one of the prepared dishes, and continue this process until all shells are filled and the dishes are full. Ensure an equal number of shells in each dish so they fit snugly together during baking. Scatter the remaining Parmesan over the shells.
  5. Cover the dishes with foil and place them in the oven to bake for 30 minutes, switching their positions halfway through. Take off the foil and bake uncovered for an additional 10 minutes. Serve warm and enjoy!
