Ingredients
- 1 pound (450 g) boneless, skinless chicken breast
- 2 cups (480 ml) heavy cream
- 1 cup (240 ml) pumpkin puree
- 1 cup (90 g) grated Parmesan cheese
- 2 tablespoons (28 g) unsalted butter
- 3 cloves garlic, minced
- 1/2 teaspoon (3 ml) salt
- 1/4 teaspoon (1 ml) black pepper
- 1/4 teaspoon (1 ml) ground nutmeg
- 8 ounces (225 g) fettuccine pasta
- 2 cups (180 g) broccoli florets
- 2 tablespoons (30 ml) olive oil
- 1/4 cup (60 ml) chicken broth
Instructions
- Season the chicken breasts with salt and black pepper on both sides.
- Heat olive oil in a large skillet over medium heat.
- Add the chicken breasts to the skillet and cook for 6-7 minutes on each side until fully cooked.
- Remove the chicken from the skillet and let it rest for a few minutes before slicing.
- In the same skillet, add the unsalted butter and melt over medium heat.
- Add minced garlic to the skillet and sauté for 1-2 minutes until fragrant.
- Stir in the pumpkin puree, heavy cream, chicken broth, and ground nutmeg.
- Bring the mixture to a simmer, stirring occasionally.
- Add the grated Parmesan cheese and stir until melted and smooth.
- Season the sauce with salt and black pepper to taste.
- Cook the fettuccine pasta according to package instructions until al dente.
- In the last 3 minutes of the pasta cooking, add the broccoli florets to the pot.
- Drain the pasta and broccoli, reserving some pasta water.
- Add the pasta and broccoli to the pumpkin Alfredo sauce, stirring to combine.
- If the sauce is too thick, add reserved pasta water a little at a time until desired consistency.
- Slice the cooked chicken and arrange it over the pasta in the skillet.
- Stir gently to combine the chicken with the pasta and sauce.
- Serve the Pumpkin Alfredo with Broccoli and Chicken hot.
