Ingredients

  • 1 pound (454 g) ground beef (450 grams)
  • 2 tablespoons (30 ml) olive oil (30 milliliters)
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon (15 ml) curry powder (15 grams)
  • 1 teaspoon (5 ml) ground cumin (5 grams)
  • 1/2 teaspoon (3 ml) ground coriander (2.5 grams)
  • 1/4 teaspoon (1 ml) cayenne pepper (1.25 grams)
  • Salt to taste
  • Black pepper to taste
  • 1/2 cup (120 ml) coconut milk (120 milliliters)
  • 1/3 cup (80 ml) creamy almond butter (80 grams)
  • 2 tablespoons (30 ml) soy sauce (30 milliliters)
  • 1 tablespoon (15 ml) lime juice (15 milliliters)
  • 1 tablespoon (15 ml) brown sugar (12 grams)
  • 1/4 cup (60 ml) chopped fresh cilantro (15 grams)
  • 1/4 cup (60 ml) chopped green onions (15 grams)
  • Cooked rice for serving


Instructions

  1. Heat 1 tablespoon of olive oil in a large skillet over medium heat.
  2. Add the ground beef and cook until browned, breaking it apart as it cooks.
  3. Remove the cooked beef from the skillet and set aside.
  4. In the same skillet, add the remaining 1 tablespoon of olive oil.
  5. Add the finely chopped onion and sauté until translucent.
  6. Stir in the minced garlic and cook for about 1 minute.
  7. Add the curry powder, ground cumin, ground coriander, and cayenne pepper to the skillet.
  8. Cook the spices for 1-2 minutes, stirring constantly to prevent burning.
  9. Return the cooked beef to the skillet and mix well with the spices.
  10. Season with salt and black pepper to taste.
  11. Pour in the coconut milk and stir to combine.
  12. Add the creamy peanut butter, soy sauce, lime juice, and brown sugar.
  13. Stir continuously until the sauce is smooth and well combined.
  14. Allow the mixture to simmer for about 5 minutes, stirring occasionally.
  15. Remove from heat and stir in the chopped fresh cilantro.
  16. Serve the curried ground beef over cooked rice.
