Ingredients
- 1 pound (454 g) ground beef (450 grams)
- 2 tablespoons (30 ml) olive oil (30 milliliters)
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 1 tablespoon (15 ml) curry powder (15 grams)
- 1 teaspoon (5 ml) ground cumin (5 grams)
- 1/2 teaspoon (3 ml) ground coriander (2.5 grams)
- 1/4 teaspoon (1 ml) cayenne pepper (1.25 grams)
- Salt to taste
- Black pepper to taste
- 1/2 cup (120 ml) coconut milk (120 milliliters)
- 1/3 cup (80 ml) creamy almond butter (80 grams)
- 2 tablespoons (30 ml) soy sauce (30 milliliters)
- 1 tablespoon (15 ml) lime juice (15 milliliters)
- 1 tablespoon (15 ml) brown sugar (12 grams)
- 1/4 cup (60 ml) chopped fresh cilantro (15 grams)
- 1/4 cup (60 ml) chopped green onions (15 grams)
- Cooked rice for serving
Instructions
- Heat 1 tablespoon of olive oil in a large skillet over medium heat.
- Add the ground beef and cook until browned, breaking it apart as it cooks.
- Remove the cooked beef from the skillet and set aside.
- In the same skillet, add the remaining 1 tablespoon of olive oil.
- Add the finely chopped onion and sauté until translucent.
- Stir in the minced garlic and cook for about 1 minute.
- Add the curry powder, ground cumin, ground coriander, and cayenne pepper to the skillet.
- Cook the spices for 1-2 minutes, stirring constantly to prevent burning.
- Return the cooked beef to the skillet and mix well with the spices.
- Season with salt and black pepper to taste.
- Pour in the coconut milk and stir to combine.
- Add the creamy peanut butter, soy sauce, lime juice, and brown sugar.
- Stir continuously until the sauce is smooth and well combined.
- Allow the mixture to simmer for about 5 minutes, stirring occasionally.
- Remove from heat and stir in the chopped fresh cilantro.
- Serve the curried ground beef over cooked rice.
- Garnish with chopped green onions before serving.
