Ingredients

  • 6 large eggs
  • 1/4 cup plain Greek yogurt (60 ml)
  • 2 tablespoons vegetable oil (30 ml)
  • 1 teaspoon mustard (5 ml)
  • 1/2 teaspoon garlic powder (1.5 g)
  • 1/2 teaspoon onion powder (1.5 g)
  • Salt, to taste
  • Black pepper, to taste
  • 1 tablespoon chopped fresh chives (3 g)
  • 1 tablespoon chopped fresh parsley (3 g)
  • Paprika, for garnish


Instructions

  1. Place 6 large eggs in a saucepan and cover with cold water.
  2. Bring the water to a boil over medium-high heat.
  3. Once boiling, cover the saucepan and remove it from the heat.
  4. Let the eggs sit in the hot water for 12 minutes.
  5. After 12 minutes, transfer the eggs to a bowl of ice water.
  6. Allow the eggs to cool in the ice water for at least 5 minutes.
  7. Peel the cooled eggs and slice them in half lengthwise.
  8. Carefully remove the yolks and place them in a mixing bowl.
  9. Arrange the egg whites on a serving platter.
  10. Mash the egg yolks with a fork until smooth.
  11. Add 1/4 cup Greek yogurt, 2 tablespoons mayonnaise, and 1 teaspoon Dijon mustard to the yolks.
  12. Mix in 1/2 teaspoon garlic powder and 1/2 teaspoon onion powder.
  13. Season with salt and black pepper to taste.
  14. Stir in 1 tablespoon chopped fresh chives and 1 tablespoon chopped fresh parsley.
  15. Spoon or pipe the yolk mixture into the egg white halves.
  16. Garnish each deviled egg with a sprinkle of paprika.
  17. Chill the deviled eggs in the refrigerator until ready to serve.
