Description

Protein balls are a delightful snack or post-workout treat that packs a nutritional punch while delivering a sweet, nutty flavor.


Ingredients

  • 1 cup cashew (or almond) butter
  • 1 1/4 cup almond flour
  • 1/2 cup chocolate protein powder
  • 1 1/2 tbsp coconut oil, melted
  • 3 medjool dates, pitted
  • 1 tbsp vanilla extract
  • 3/4 tsp ground cinnamon
  • 1/4 tsp almond extract
  • 1/3 cup chocolate chunks
  • 1 tsp finishing salt
  • 2 oz cacao butter
  • 4.5 oz coconut butter
  • 1/4 tsp almond extract (for glaze)
  • 1/2 tsp blue spirulina


Instructions

  1. Begin by mixing all ingredients in a food processor until a dough forms, ensuring a uniform texture.
  2. Fold in the chocolate chunks and finishing salt.
  3. Roll the mixture into 1.5-inch balls and place them in the freezer to set for two hours.
  4. For the glaze, melt cacao butter and coconut butter together. Whisk in almond extract and allow it to cool slightly.
  5. After freezing, dip the chilled protein balls into the glaze and return them to the freezer for an additional 10 minutes.
  6. Decorate as desired and store in the fridge or freezer.

Notes

Experiment with sweetness by adding more medjool dates or honey. Store in an airtight container in the fridge for up to two weeks or freeze for months.
