Ingredients
- 6 slices beef bacon (150 g)
- 1 whole medium onion, diced
- 3 whole carrots, scrubbed clean and diced
- 3 stalks celery, diced
- 6 small russet potatoes, peeled and diced
- 1/2 tsp (3 ml). salt, plus more to taste
- Black pepper, to taste
- 1/2 tsp (3 ml). Cajun spice mix
- 8 cups (1920 ml) (2 liters) low-sodium chicken or vegetable broth
- 3 tbsp (45 ml). all-purpose flour
- 1 cup (240 ml) milk
- 1/2 cup (120 ml) heavy cream
- 1 tsp (5 ml). minced fresh parsley
- 1 cup (100 g) grated cheese of your choice
Instructions
- Place the bacon slices in a soup pot set over medium heat, cooking until they become crispy and the fat is released. Take the bacon out and keep it aside. Drain most of the fat, but don’t wash the pot.
- Put the pot back on medium-high heat, add the diced onion, carrot, and celery, and stir for around 2 minutes. Then, incorporate the diced potatoes. Let them cook for 5 minutes while sprinkling with salt, black pepper, and Cajun seasoning.
- Add the broth, bringing it to a gentle boil. Let it simmer for 10 minutes or until the potatoes begin to soften. Mix the flour with the milk, then add this mixture to the soup, allowing it to cook for another 5 minutes.
- Take out half to two-thirds of the soup and blend in portions using a blender or food processor until it is fully smooth. (Caution: Be careful when blending hot soup; if possible, let the soup cool down before blending.) Return the blended portion back to the pot, stirring to mix.
- Reheat the soup while checking the taste and adjusting the seasoning as needed. Mix in the heavy cream, followed by the parsley, saving a bit for garnish.
- Dish the soup into bowls, topping with parsley, grated cheese, and the reserved crispy bacon pieces.
