Description

A delightful cake that captures the essence of summer fruits, offering a perfect balance of sweetness and tartness with juicy plums and/or apricots in a soft, buttery base.


Ingredients

  • 2 cups all-purpose flour
  • 4 tsp baking powder
  • â…› tsp ground cloves or nutmeg
  • ½ tsp kosher salt
  • 4 oz unsalted butter
  • 1 ¼ cup granulated sugar
  • 4 eggs
  • 1 tsp vanilla extract
  • ¼ tsp almond extract
  • 2 plums and/or apricots, chopped
  • 1 tbsp turbinado sugar


Instructions

  1. Preheat the oven to 350°F (175°C) and grease and flour a 9-inch cake pan.
  2. In a bowl, whisk together the flour, baking powder, cloves or nutmeg, and salt.
  3. In another bowl, cream the butter and granulated sugar until light and fluffy.
  4. Add the eggs one at a time, beating well after each addition.
  5. Stir in the vanilla and almond extracts.
  6. Gradually add the dry mixture into the wet ingredients, mixing until just combined.
  7. Gently fold in the chopped plums and/or apricots.
  8. Pour the batter into the prepared cake pan and smooth the top.
  9. Sprinkle the turbinado sugar over the batter.
  10. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  11. Allow the cake to cool before serving.

Notes

Serve with fresh whipped cream or a scoop of vanilla ice cream. Dust with powdered sugar for an elegant finish.
