Description
A delightful cake that captures the essence of summer fruits, offering a perfect balance of sweetness and tartness with juicy plums and/or apricots in a soft, buttery base.
Ingredients
- 2 cups all-purpose flour
- 4 tsp baking powder
- â…› tsp ground cloves or nutmeg
- ½ tsp kosher salt
- 4 oz unsalted butter
- 1 ¼ cup granulated sugar
- 4 eggs
- 1 tsp vanilla extract
- ¼ tsp almond extract
- 2 plums and/or apricots, chopped
- 1 tbsp turbinado sugar
Instructions
- Preheat the oven to 350°F (175°C) and grease and flour a 9-inch cake pan.
- In a bowl, whisk together the flour, baking powder, cloves or nutmeg, and salt.
- In another bowl, cream the butter and granulated sugar until light and fluffy.
- Add the eggs one at a time, beating well after each addition.
- Stir in the vanilla and almond extracts.
- Gradually add the dry mixture into the wet ingredients, mixing until just combined.
- Gently fold in the chopped plums and/or apricots.
- Pour the batter into the prepared cake pan and smooth the top.
- Sprinkle the turbinado sugar over the batter.
- Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the cake to cool before serving.
Notes
Serve with fresh whipped cream or a scoop of vanilla ice cream. Dust with powdered sugar for an elegant finish.
