Ingredients
- 1 cup of cottage cheese
- 2 cups of shredded mozzarella cheese (divided)
- 1 cup of pizza sauce
- 2 cups of frozen mixed vegetables
- 2 cups of cooked pasta (like penne or rotini)
- 1 teaspoon of Italian seasoning
- Salt to taste
- Pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- Combine the cottage cheese, half of the mozzarella cheese, pizza sauce, mixed vegetables, cooked pasta, Italian seasoning, salt, and pepper in a large mixing bowl.
- Pour the mixture into a greased baking dish.
- Top with the remaining mozzarella cheese.
- Bake in the preheated oven for 25-30 minutes, or until the cheese is melted and bubbly.
- Let it cool for a few minutes before serving.
Notes
For a crispy top, consider broiling the dish for a couple of minutes once it is fully baked. Allowing the baked dish to sit for a few minutes after removing it from the oven will make serving easier.
