Ingredients
- 1 1/2 Cups All-Purpose Flour
- 2 Large Eggs
- 1/2 Cup Unsalted Butter
- 1/4 tsp Salt
- 1 tsp Baking Powder
- 3/4 Cup White Sugar
- 2/3 Cup 2% Milk
- 1 Package Jell-O Pistachio Pudding Mix
- 1/4 Cup Chopped Pistachios
- 1 Cup Icing Sugar
- 2 Tbsp 2% Milk (for the icing)
Instructions
- Preheat your oven to 350°F and grease the loaf pan thoroughly.
- In a mixing bowl, cream together the white sugar, large eggs, and unsalted butter until the mixture is light and fluffy.
- Gradually add in the 2/3 cup of 2% milk, Jell-O pistachio pudding mix, baking powder, and salt. Mix well until all ingredients are well blended.
- Carefully fold in the all-purpose flour until clump-free.
- Transfer the batter into the prepared loaf pan, smoothing the top with a spatula.
- Bake for 40 to 50 minutes or until a toothpick inserted into the center comes out clean.
- Allow the bread to cool in the pan for a few minutes before transferring it to a wire rack to cool completely.
- For icing, mix 1 cup of icing sugar with 2 tablespoons of 2% milk and drizzle it over the cooled bread.
Notes
For extra flavor, toast the chopped pistachios before adding them to the batter. Consider adding chocolate chips or orange zest for variation.
