A simple yet delightful side dish made with jasmine rice, crushed pineapple, and lime juice, perfect for any meal.
Ingredients
- 1 Cup jasmine rice (not instant)
- 1½ Cups water
- 1 Tablespoon unsalted butter
- 1 (8-ounce) can crushed pineapple in juice (don’t drain)
- ½ Teaspoon Kosher salt
- 1 Tablespoon granulated sugar
- 1½ Tablespoon fresh lime juice
- 2 Tablespoons green onion (chopped)
Instructions
- Combine jasmine rice, water, butter, crushed pineapple, salt, and sugar in a medium saucepan and stir until merged.
- Bring to a boil over medium-high heat, then reduce to a simmer and cover. Cook for 15-20 minutes until the rice absorbs the water and becomes tender.
- Remove from heat, squeeze lime juice over the rice, and fluff with a fork. Serve hot, garnished with chopped green onions.
Notes
For added flavor, consider sautéing green onions in butter before adding the other ingredients. Can store leftovers in an airtight container in the fridge for 3-4 days.
