Description

Gooey caramel-filled cookies made with creamy peanut butter and drizzled with rich chocolate for a delightful treat.


Ingredients

  • 2 cups old-fashioned oats
  • 1 cup peanut butter (creamy or chunky)
  • 4 tablespoons unsalted butter
  • ½ cup brown sugar
  • ¼ cup whole milk
  • 1 teaspoon vanilla extract
  • 1 cup caramel sauce (store-bought or homemade)
  • 1 cup chocolate chips (melted)
  • Sea salt (optional, for garnish)


Instructions

  1. Combine butter, brown sugar, and milk in a medium saucepan over medium heat. Stir until butter melts and mixture bubbles. Remove from heat and mix in peanut butter and vanilla until smooth.
  2. Gradually add oats, stirring until evenly coated. Portion onto a parchment-lined tray, flatten slightly, and create a small indentation in each cookie.
  3. Spoon caramel sauce into the indentation.
  4. Melt chocolate chips and drizzle over the cookies.
  5. Refrigerate for at least 30 minutes to firm up.

Notes

Adding sea salt as a garnish enhances the flavors. Experiment with using homemade or store-bought caramel sauce.
