Description

Peach butter swim biscuits capture the essence of summer with their buttery richness and sweet bursts of peach, creating a comforting and moist treat.

Ingredients

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/4 cup granulated sugar
  • 1/2 teaspoon salt
  • 1 cup buttermilk
  • 1/2 cup unsalted butter (melted)
  • 1 cup canned or fresh diced peaches (drained if using canned)
  • 1/4 cup peach juice or syrup (from canned peaches or fresh puree)

Instructions

  1. Preheat the oven to 450°F (232°C).
  2. Whisk together flour, baking powder, sugar, and salt in a large bowl.
  3. Stir in buttermilk and peach juice until just combined.
  4. Fold in diced peaches gently.
  5. Pour batter over melted butter in an 8×8-inch baking dish.
  6. Lightly score the dough into 9 squares.
  7. Bake for 25-30 minutes, or until golden brown.
  8. Let cool in the pan for 10 minutes before serving.

Notes

For best flavor, use fresh peaches when in season. Ensure butter is fully melted before pouring batter over it.
