Description

Ingredients

  • 1 tablespoon olive oil
  • 1 pound ground beef
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 1 can (15 oz) cannellini beans, rinsed and drained
  • 1 can (14.5 oz) diced tomatoes, with juice
  • 2 cups small pasta (like ditalini or elbow)
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Parmesan cheese, for serving
  • Fresh parsley, for garnish


Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add ground beef and cook until browned; drain excess fat.
  3. Add onion, carrots, celery, and garlic; sauté until veggies are tender.
  4. Stir in beef broth, beans, diced tomatoes, oregano, salt, and pepper.
  5. Bring to a boil, then reduce heat and simmer for 10 minutes.
  6. Add pasta and cook until al dente, about 8-10 minutes.
  7. Serve hot, topped with Parmesan cheese and parsley.

Notes

For a thicker soup, reduce beef broth; for a brothier soup, add more broth. Fresh vegetables and herbs can enhance flavor.
