- 2 pounds red potatoes
- 3 tablespoons olive oil
- 1.5 cups freshly grated Parmesan cheese
- 1 teaspoon garlic powder
- 1 teaspoon dried Italian herbs

- 0.25 teaspoon black pepper
Instructions
- Preheat your oven to 425°F (220°C).
- Wash the red potatoes thoroughly and cut them into 1-inch cubes.
- In a large bowl, combine olive oil, garlic powder, Italian herbs, salt, and black pepper. Mix until the ingredients blend well.
- Add the cubed potatoes to the bowl and toss to coat them evenly with the oil and spice mixture.
- Spread the coated potatoes on a baking sheet in a single layer to ensure even roasting.
- Roast in the oven for about 25 minutes.
