Description

A delicious and nourishing side dish featuring fresh asparagus, topped with Parmesan cheese and roasted to perfection.


Ingredients

  • 1 lb Asparagus
  • 1/2 cup Freshly shaved Parmesan cheese
  • 1 cup Diced tomatoes
  • 3 cloves Minced garlic
  • 2 tbsp Balsamic glaze
  • 2 tbsp Olive oil
  • Salt to taste
  • Pepper to taste


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Trim the ends of the asparagus and place them on a baking sheet.
  3. Drizzle with olive oil and sprinkle with salt and pepper.
  4. Add shaved Parmesan cheese, diced tomatoes, and minced garlic over the asparagus.
  5. Roast in the oven for 15-20 minutes until tender.
  6. Drizzle with balsamic glaze before serving.

Notes

For additional crunch, you can top with roasted pine nuts or a sprinkle of lemon zest before serving.
