Description

A rich and creamy dip made with roasted artichokes, white cannellini beans, and fresh herbs, perfect for any gathering.


Ingredients

  • 1 15oz package roasted artichokes or store-bought marinated (drained)
  • 1 15oz can white cannellini beans (rinsed & drained)
  • 1/2 lemon, juiced and zested
  • 2 tablespoons olive oil
  • 2 teaspoons fresh thyme
  • 2 teaspoons fresh oregano
  • 2 teaspoons fresh basil
  • 1/4 teaspoon salt
  • Black pepper (to taste)
  • 2 cloves garlic (minced)
  • 1/2 cup Trader Joe’s Quattro Formaggio or any Italian cheese blend


Instructions

  1. Place the artichoke hearts, white cannellini beans, lemon juice and zest, olive oil, thyme, basil, salt, pepper, and minced garlic into a 7-cup food processor or blender.
  2. Pulse until the mixture combines thoroughly.
  3. Add the cheese and pulse until the dip achieves a smooth consistency.
  4. Transfer the dip to a serving bowl, covering it tightly to preserve freshness.
  5. Refrigerate for up to two days before serving.
  6. Enjoy the dip chilled.

Notes

To enhance flavor, use roasted garlic instead of raw and experiment with different cheese blends.
