A delightful twist on classic pancakes, this Pancake Casserole is perfect for gatherings or lazy weekend mornings, featuring fresh berries and fluffy pancake batter.
Ingredients
- 2 cups pancake mix
- 1 ½ cups milk
- 2 large eggs
- 1 cup mixed berries
- 1 cup Greek yogurt
- Maple syrup for serving
- Oil or butter for greasing the baking dish
Instructions
- Preheat the oven to 350°F (175°C) and grease a baking dish with butter or oil.
- In a large bowl, mix the pancake mix, milk, and eggs until just combined.
- Pour half of the batter into the greased baking dish and spread it out evenly.
- Sprinkle the mixed berries over the batter.
- Pour the remaining batter over the berries, spreading it evenly.
- Bake in the preheated oven for 25-30 minutes or until the top is golden brown and a toothpick inserted in the center comes out clean.
- Remove from the oven and let it cool slightly.
- Serve warm, topped with Greek yogurt and a drizzle of maple syrup. Dust with powdered sugar if desired.
Notes
Fresh berries work beautifully, but frozen berries can also be used. Thaw them slightly to prevent excess moisture in the batter. Feel free to customize with nuts or chocolate chips.
