Description

A delicious and nutritious turkey meatloaf made with ground turkey, almond flour, and a blend of veggies, perfect for a healthy lifestyle.


Ingredients

  • 2 lbs ground turkey
  • 1/2 cup almond flour
  • 2 large eggs
  • 1 cup grated zucchini (squeezed dry)
  • 1/2 cup finely chopped onion
  • 2 cloves garlic, minced
  • 2 tbsp coconut aminos
  • 1 tbsp dried Italian herbs
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp smoked paprika (optional)
  • For the glaze:
  • 1/4 cup tomato paste
  • 2 tsp apple cider vinegar
  • 1 tbsp coconut aminos
  • 1/2 tsp garlic powder (optional)


Instructions

  1. Preheat the oven to 375°F (190°C) and prepare a loaf pan with parchment paper or non-stick spray.
  2. In a large mixing bowl, combine the ground turkey, almond flour, eggs, squeezed dry zucchini, onion, garlic, coconut aminos, Italian herbs, salt, black pepper, and smoked paprika. Mix gently until combined.
  3. Transfer the mixture to the prepared loaf pan and smooth the top.
  4. In a small bowl, whisk together the glaze ingredients and spread over the top of the meatloaf.
  5. Bake in the oven for 50-60 minutes, checking that the internal temperature reaches 165°F (74°C).
  6. Let the meatloaf rest for about 10 minutes before slicing, to allow the juices to redistribute.

Notes

For added flavor, adjust seasonings to your preference. Consider using a meat thermometer for perfect results.
