A delicious and nutritious turkey meatloaf made with ground turkey, almond flour, and a blend of veggies, perfect for a healthy lifestyle.
Ingredients
- 2 lbs ground turkey
- 1/2 cup almond flour
- 2 large eggs
- 1 cup grated zucchini (squeezed dry)
- 1/2 cup finely chopped onion
- 2 cloves garlic, minced
- 2 tbsp coconut aminos
- 1 tbsp dried Italian herbs
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp smoked paprika (optional)
- For the glaze:
- 1/4 cup tomato paste
- 2 tsp apple cider vinegar
- 1 tbsp coconut aminos
- 1/2 tsp garlic powder (optional)
Instructions
- Preheat the oven to 375°F (190°C) and prepare a loaf pan with parchment paper or non-stick spray.
- In a large mixing bowl, combine the ground turkey, almond flour, eggs, squeezed dry zucchini, onion, garlic, coconut aminos, Italian herbs, salt, black pepper, and smoked paprika. Mix gently until combined.
- Transfer the mixture to the prepared loaf pan and smooth the top.
- In a small bowl, whisk together the glaze ingredients and spread over the top of the meatloaf.
- Bake in the oven for 50-60 minutes, checking that the internal temperature reaches 165°F (74°C).
- Let the meatloaf rest for about 10 minutes before slicing, to allow the juices to redistribute.
Notes
For added flavor, adjust seasonings to your preference. Consider using a meat thermometer for perfect results.
