Ingredients
- 1 pound breakfast sausage
- 8 large eggs
- 2 cups shredded cheese (cheddar or your choice)
- 4 cups frozen hash browns
- 1 bell pepper, diced
- 1 onion, diced
- 2 cups milk
- Salt and pepper to taste
- Optional: herbs like parsley or chives for garnish
Instructions
- Preheat the oven to 350°F (175°C).
- Brown the sausage in a skillet over medium heat until golden brown; drain excess fat.
- Grease a 9×13 inch baking dish and layer the frozen hash browns, followed by the cooked sausage, diced bell pepper, and onion.
- Sprinkle the shredded cheese on top.
- In a large bowl, whisk together the eggs and milk, seasoning with salt and pepper. Pour this mixture over the layered ingredients.
- Cover the dish with foil and refrigerate overnight.
- The next morning, remove the foil and bake for 45-55 minutes until the center sets and the top becomes golden brown.
- Let it sit for a few minutes before serving, and garnish with fresh herbs if desired.

You can customize the cheese and swap out the sausage for turkey or chicken sausage if desired. Serve with fresh fruit salad or toast.
