Ingredients
- 1 large yellow crook neck or zucchini squash sliced into 1/4 inch rounds
- 1 large egg beaten
- 1 cup (240 ml) fine bread crumbs
- 1/4 cup (60 ml) grated Parmesan Cheese
- 1/2 tsp (3 ml) Garlic Salt
- 1/4 tsp (1 ml) Coarse Black pepper
- 3 Tablespoon (45 ml) s Olive Oil for baking
Instructions
- Set your oven to 325°F to preheat.
- Drizzle 3 tablespoons of olive oil over a large baking tray to prepare it.
- Whisk the egg in a shallow bowl until well mixed.
- In another shallow dish, combine the bread crumbs with Parmesan cheese, garlic salt, and black pepper, stirring until evenly blended.
- Dip a squash slice into the egg mixture, ensuring both sides are covered.
- Transfer the squash from the egg mixture to the bread crumb mixture, coating both sides thoroughly.
- Arrange the coated squash slices on the oiled baking tray.
- Continue the process until all squash slices are covered and arranged on the tray.
- Insert the tray into your preheated oven.
- Cook for 10-15 minutes until the bottom is crispy and golden, then carefully turn each piece over with a fork.
- Continue baking for an additional 10-15 minutes until both sides are golden and crispy.
- Once done, remove from the oven and let them rest for 3-4 minutes.
- Use a spatula to lift each cooked squash round from the tray and place them on a serving dish.
- Sprinkle with extra Parmesan cheese if desired.
- Serve the squash warm with Ranch dressing for dipping.
