Ingredients

  • 1 large yellow crook neck or zucchini squash sliced into 1/4 inch rounds
  • 1 large egg beaten
  • 1 cup (240 ml) fine bread crumbs
  • 1/4 cup (60 ml) grated Parmesan Cheese
  • 1/2 tsp (3 ml) Garlic Salt
  • 1/4 tsp (1 ml) Coarse Black pepper
  • 3 Tablespoon (45 ml) s Olive Oil for baking


Instructions

  1. Set your oven to 325°F to preheat.
  2. Drizzle 3 tablespoons of olive oil over a large baking tray to prepare it.
  3. Whisk the egg in a shallow bowl until well mixed.
  4. In another shallow dish, combine the bread crumbs with Parmesan cheese, garlic salt, and black pepper, stirring until evenly blended.
  5. Dip a squash slice into the egg mixture, ensuring both sides are covered.
  6. Transfer the squash from the egg mixture to the bread crumb mixture, coating both sides thoroughly.
  7. Arrange the coated squash slices on the oiled baking tray.
  8. Continue the process until all squash slices are covered and arranged on the tray.
  9. Insert the tray into your preheated oven.
  10. Cook for 10-15 minutes until the bottom is crispy and golden, then carefully turn each piece over with a fork.
  11. Continue baking for an additional 10-15 minutes until both sides are golden and crispy.
  12. Once done, remove from the oven and let them rest for 3-4 minutes.
  13. Use a spatula to lift each cooked squash round from the tray and place them on a serving dish.
  14. Sprinkle with extra Parmesan cheese if desired.
  15. Serve the squash warm with Ranch dressing for dipping.
